Remote Global Catalog servers

I have 12 servers that I just configured as Global Catalog Servers that are going to be placed off site at the each location.. When the users go to logon at these remote sites to my domain which is just a single forest domain, and not split up into multiple forests or child domains will these users automatically poll the nearest Global Catalog server on the domain?

Basically will these Global Catalog servers that I put in their HQs automatically be the server that they read login information from, I guess I am not sure how the election takes place, or if I need to go in, and setup these machines through GPO to login to gc1.domain.local or gc2.domain.local..

The NTDS replication is working fine without errors to my three domain controllers here in the central HQ..

I have never set this stuff up on this large of a scale before.

I would setup each location with a different subnet and then setup sites in AD to match. Then when the user logs in they will use the resources closest to them.

Yes, you absolutely need to setup sites in AD otherwise your users may authenticate anywhere including at other remote offices.
