I have minimal experience with *nix. I used Ubuntu for about a year and became familiar with the command line to the point that I could function, but not excel.

We have a new customer which will be using RedHat Enterprise 5 on some of their servers, so a few of us will be sent to RedHat training.

How difficult is it to attain the first RedHat cert? Would a more generic *nix training class help me the most?

Looking for any advice really... Just want to learn as much as possible :)

Checkout the Pre-assessment Questionnaires on RH's site to get a feel for where you stand with regards to their certs.

the RHCE is more difficult than the standard 100multiple choice tests as you have a lab, as such it is more representative of your actual knowledge, and in my experience, more valuable than say a CompTIA Linux+

also it would be much easier if you have worked on RH in real work environment for a year or so.
