Recommend foods that keep well without refrigeration

Going camping for 10 days and I need to bring all my food with my that I will eat. Temperature could be anywhere from 40 at night to 70 during the day.

I won't have access to any ice, so a cooler is out of the question. I'm not backpacking, so weight isn't a huge concern, but i'd rather steer somewhat away from bringing 300lbs of canned food.

So far here is what i've come up with:
-jerkey
-cheese (cheddar)
-fresh oranges
-energy bars, granola
-snack mix
-MRE?s
-bread?
-pasta
-potatoes
-oatmeal
-crackers
-cereal (with dehydrated milk)

Anything else? Are there any other meats that can be taken that don't need refrigeration, like salami or something? Any other fruits/veggies besides oranges keep for close to 2 weeks?

Dried fruits such as raisins. Some juices, including most apple juice, will keep for a long time unrefrigerated. Not that drinking warm apple juice is especially great.

I've kept cheddar unrefrigerated for quite a while, especially if it is unopened. If it is opened you just need to keep a cloth soaked with vinegar in it to keep it moist/mold free.

Hey now, have you ever actually had any Spam? It tastes like salted meat, the same way that sandwich meat does. Completely generic, completely inoffensive. Thin slices of Spam fried with fresh veggies even tastes pretty damn good.

I don't really like all those cheap lunch meats. They are pretty much just preservatives injected with water and a tiny bit of real meat. If I get lunch meat I go for the good stuff that actually still resembles meat.

Cream Cheese
Muenster Cheese
Smoked Salmon
Lettuce
Tomato
Cucumber
Salt, Pepper, Italian Seasonings

Pretty amazing sandwich.
 
Why not use a cooler with dry ice?

We went camping a year ago and where able to keep foods frozen for a week, with dry ice.

Hmm.. didn't think of that. I didn't realize dry ice lasted that long. How much do you need to keep for a week?
 
If you're "day camping" at one spot, a really big cooler with some dry ice will keep things cold for a very long time. Cover the cooler with a blanket or something during the day, it makes a difference. Best is in the trunk/back of your car with blankets over and under it. The "blue ice" packs and such also work fairly well, but not as good as dry ice. Benefit of them is they won't popsicle your food or beer and don't leave a huge mess of water like ice. If you have dry ice, you can use the dry ice to re-freeze the ice packs to cool your beer*.

Give a lot of thought about how you arrange it - layer it with pre-frozen stuff for later in the week on the very bottom, then the dry ice, then maybe a layer of plastic, some ice or cold packs, other stuff on top. The plastic/ice layer will hopefully keep the dry ice from turning stuff on top to a popsicle..

If you're backpacking look at dry pasta mixes and rice, but remember you're going to need a lot of water.

*Well, we'll be doing plenty of drinking on this trip. After all, hunting <camping> sober is like... fishing... sober.
 
If you're backpacking, you can typically use canned meats and the boxed pastas. We would combine ramen + tuna helper + chicken. It's really just a huge influx of calories, as that's what you need when backpacking. You can also use summer sausage during lunch, and don't forget to grab some of those single serving jelly packets & some PB&J for lunches. Poptarts are good for breakfast - I suggest hitting up your local REI or that type store and find the dehydrated meals. I prefer the spaghetti or lasagna meals. They also have dehydrated beef that you can use in hamburger helper.

Hard salami (not sliced) lasts quite a while. I'd bring it.
