The iPod only has a 20MB cache. It takes more than a couple seconds to spin up the drive, copy data to the cache, spin down the drive and lock the heads. So every 3-4 songs you've got a period where you could crash the heads. Personally, I wouldn't risk it doing cardio. the anti-skip mechanism certainly does the job, and despite some pretty frenzied shaking I wasn't able to interrupt the playback
