I really enjoyed the codemasters games, Dirt 1, 2, & 3, Grid, and F1 look amazing.
The Circuit Style Need for Speed Shift, and Shift 2 were good.
If you want more sim less arcade, race 07 and expansions are great (though not graphicly if thats important)
Want to cruise in a big open world Test Drive Unlimited 2, very arcadey controls, but something its fun to just drive.

360 halo/madden type, that almost puts you into a sterotype, dirt3 or need for speed shift 2 should be fun!

My favorite so far - and I don't like the genre much - is Burnout Paradise on PS3, but it's also available on PC.

Burnout Paradise is my favorite racing game of all time. It has alot of fun modes, and it's not an on rails racer. In half the races I do a 180 at the starting line and go the opposite way to win. :) I like to wreck other cars, do crazy stunts, and it doesn't take itself to seriously. It's the only racing game (and only one of a few games overall) that I've 100%ed more than once.

I dunno, if you're primarily a console gamer I might actually recommend going with a console racing game. Unless you have a controller you can use on your PC you will be better off using a controller instead of the keyboard for the analog controls. For not-too-serious racing, the Need For Speed and Burnout series are good. Project Gotham 4 is a few years old but super fun on the 360, not too realistic or sim-like. Same with Codemasters games (Dirt 1/2/3, Grid). On the 360 also Forza 3 is pretty good and Forza 4 is on its way.

For PC racing, I have Grid and Dirt 2 and both run really well on my Radeon 4870 so I don't think you'll need a crossfire setup or anything. Super high end graphics are usually more helpful for FPSs; racing games don't tend to be that demanding since they can blur out most of the scenery. Then again I don't really understand the appeal of crossfire/SLI at all since it's almost never the best value for money given the cost of mid-high end single graphics cards.

Don't get Shift 1/2, Grid is better and the same arcade/sim mashup.
