I want to run a signal from a cable box about 40 feet to a wall outlet. Would it be better to run it with a really long RCA cable, or use an RCA-> F-Type (coaxial) and let the coax cable run the signal, then convert back to RCA at the receiving end? What are advantages/disadvantages to these options?

There is no such thing as a "RCA-cable". RCA is a type of connector.
The important thing is not the type of connector but what kind of cable you use, I think you can safely assume that any high-quality cable intended for video will be coaxial regardless of what type of connector is used.

That said, generally speaking cables intended for long distances tend to use BNC connectors which is generally a better option than RCA since the impedance is well definied.

Just run a composite video cable (that has RCA connectors on its ends). If it's a good cable and well shielded, you shouldn't have any problems. If you convert from composite to modulated and back to composite you'll degrade your signal at both stages of the conversion.

I did something similar to this between a DVD player and a DLP projector via 3xRCA component video.

We used 3 long pieces of RG6-QS coax cable and used a professional Snap-N-Seal tool to crimp heavy duty RCA connectors on each end. The picture was beautiful, even at almost 50 feet.

Another option would be to crimp on regular old screw-on cable-tv-style "F" connectors. RadioShack sells F-to-RCA adapters that you could use on either end.

depends on the wiring in the wall. if you got coax, thats good. if you got crappy ass stereo wires, no go.
