I really like smoked almonds as long as they don't overdo it with the salt. Otherwise, raw almonds are better than roasted. They have a better chew to them and a sweetness that otherwise gets roasted out.
With cashews, they are best dry roasted and lightly sea salted.
I think the worst thing you can do to nuts or other kernels is roast them in peanut oil. Peanut oil destroys the nut's original flavor and gives them a less appealing crunch.
If oil is to be used, then I think sunflower oil is best.
