I dont really like the guy. Mr. Ramsay's demeanor leaves much to be desired:

Obviously you've never worked in a kitchen. Chefs are usually not nice people, especially during the middle of work. Not saying it's right, but it is what it is.

To call food "terrible", you need to at least give descriptors or something to work with. The lady couldn't come up with anything and obviously Gordon was offended.
 
Rare. It is where the meat's taste is self-sufficient.

With a lousy cut, medium-well or well done with sauce. If you do rare your tongue will try to slime its way past the sauce to get to the meat flavor. Cook it to shoe leather and you don't have that problem.

It's true to the other side as well. I order medium well i get medium rare. I order well done I get medium. Almost have to order it charred just to make sure it's cooked through.

Because the chef is basically refusing to ruin your steak for you. That's the point. They dont WANT to fuck up your meal and cook it wrong.

Here's a clue too... my wife has her culinary degree and has worked in several high-end kitchens (and in turn knows a lot of ACTUAL chefs around town). She has told me, many times, that when somebody orders "well done" or "medium well" the chefs would in fact purposely cook it lower than requested. If it was sent back and requested to be cooked more, that steak would find itself in the microwave.

Medium rare. Sear the outside, it should be red and warm on the inside... mmm.
Ground meat is of course different.
 
Medium Rare for steak and Medium well for hamburger. If I order well done on a burger its always over well done.
 
You do realize that's not b/c of the chef right? That's b/c the guy who's cooking it, the guy from the Dominican, Ecuador, or Peru, doesn't want to waste any time with that meat on the roll-out grill when he can just walk it across the heat in two minutes and serve it and get the dupe off his board.

Extremely well done. Bonus points if it has rock hard charred bits on the edges :^D

QFT: I was raised on Round steak, always well done, with Worcestershire sauce.
These tastes seem to stick with you throughout the years. Round steak has the flavor I prefer, but it is SOOO tough!
That said, I do like my lesser quality cuts well done, but prefer Prime Rib, Filet Mignon, and New York Strip med. rare. (Still like the Worcestershire on the strip sometimes, though 🙂 )
