I dunno. I got this funny aversion to E.Coli or something I think. D:
Bacteria lives on the surface of the meat and is killed when the outside is seared. E. coli is a problem with ground beef because grinding mixes the surface throughout the meat.

I like steak rare. It should be seared on the outside and cooked through just enough to ensure it doesn't twitch when sliced.
 
Medium rare, erroring on the side of medium. I want it juicy and tender...but not so rare that it's hard to cut. There's a fine line there that's hard to hit.
 
Extremely well done. Bonus points if it has rock hard charred bits on the edges :^D

That said, I don't much like steak. I think I've had it once in the last decade. Given a choice of the best steak in the world, or an average bacon cheeseburger, from an average pub. I'll take the cheeseburger every time.
 
Medium rare. I don't understand people who want a steak, but cooked so thoroughly it's lost all semblance of steak-ness. If you want a well-cooked piece of meat, get pork, it stands up much better to thorough cooking.

I like steak, but I agree on the burger. I'll take a good cheeseburger any day over a steak. And it's not even a cost thing....I just love me a giant ass cheeseburger with bacon, cheddar, some onion rings and some BBQ sauce for a little moisture and flavor on a butter toasted bun.

Really? Maybe it's because I eat burger and fries for lunch about 3 days a week, I need a nice big steak pretty much every weekend. I don't ever crave a burger but I crave steak along with crab legs/ scallops/ lobster/ shrimp come Thursday. So I stop by Costco on Friday or Saturday for my weekly weekend surf and turf fix.

I'm the opposite. I get 1/4 cow a year and have a couple dozen steaks in the freezer at any given time that I can cook. A big juicy ass bar burger isn't something that I get but maybe once a month and I'll go to a bar just for that. I can cook a steak better than most restaurants but there's something about some of the bar burgers near me that I can't replicate.

Not at all. I just don't like steak much. It's ok, but not worth the cost for me, especially when it'll always be inferior to a cheeseburger. I'd pay extra for all the chefs burnt fuckups on any particular day, then having the best steak he could produce :^)

buy better quality steaks... Rib Eyes or Strips or Filets..

and have someone that KNOWS how to cook it do it.

A good steak should need no sauce.. or extra seasoning and should melt in your mouth.

anything else and the Chef/Steak fails.
 
Burgers - Well done.

Steak - Use to go with well done only, but after getting a few that could have been used to re-sole a pair of work boots I changed. Now order it as medium-well to well done, which normally has at most just a thin faint line with a hint of pink in the middle but still turns out pretty tasty to me.

Dude, I've been around a long time, and I've had enough steaks over the years. If I have one, it better be black and crusty, or the mediocrity that is already steak will be just about unbearable.

doesn't mean you have had a good one.. 99.9% places cannot make a decent steak..
