Ram on a DFI lan party? How do i set it up?

There are 4 slots. 2 of the 4 are the same color. 2 yellow, 2 orange. To get the best settings with my ram, do i put a stick in each color, or each stick in the same color?

Same color for dual channel. That's what you want.

How about the jumpers that are funky by the pci E. i HAVE A 7800 GTX, do i do anything? or leave it.

All the jumpers are explained in the manual. And no, you shouldn't have to adjust any of them.
