I'm a noob when it comes to HD.

Thinking of replacing my 80g and my 20g ATA drives with two 80g Seagate SATA drives and 'Raiding them'. (I cant Raid my current drives can I?)

Which is the better way to set them up and how much performance increase can I expect over my current set up?

Check out the article in the storage section and you will see RAID does not make much difference in performance at all.
