Raid, What does it do?

OK, I know this might sound really stupid but what exactly does a raid setup do? I haven't put together my computer yet but my motherboard has Promise raid onboard. So i can use the Raid feature if i want to but what are the pros and cons of such a setup?? If i do not use the raid setup. . is there any way to disable the Raid detection in the BIOS. ECS K7VTA3 v3.1 on the Anandtech review says you can't disable it . . . Does that mean i mite as well use the Raid setup if i have to go through the Raid boot process?
