Raid 0

I am looking for a solution for setting up my AVCHD machine. The logical video drive will be a RAID 0 configuration. 2 drives are common for RAID 0, can 3 drives be used in RAID 0 ?? I have 3 of the same NS enterprise drives I can utilize to cut down on costs.

Yes, it is possible for 3+ drives in raid0 configuration. It all depends on your hardware if is is supported.

Technically you can have as many disks in RAID0 as you want, but it all depends on the capability of the RAID software. But the "bad idea" level of RAID0 goes up exponentially with every drive you add into the volume.
