It depends upon the capabilities of the individual RAID controller. If it's a high end Escalade model or a decent hardware RAID controller or similar then you most definitely be capable of it, if your relying on Win2k/XP's built in software RAID capabilities then you cannot.
I generally don't put much faith in the reliability of the cheapy software RAID controllers commonly integrated on motherboards so I'm no totally sure on them... though I'm inclined to guess they probably cannot as most add-on software RAID controllers can't.
Yes, you can still continue to boot to windows or whatever off your current ide drive and then have the raid array as your secondary drive. Even with the "cheap" built-in controllers on motheboards.
