I'm writing a screenplay and would love to use a line from a Kurt Vonnegut story.. Would that be plagiarism or an homage?

It's plagiarism if you do not give credit and try to pass off the quote as your own.

It is not plagiarism if you give proper credit and make it obvious Vonnegut said it.

So would the character actually have to say "as Kurt Vonnegut said in...." or could I just add a line in the end credits?

At the absolute least you need to include a reference to Kurt Vonnegut in the end credits. The rules could be different in a play...I'd check with your english professor/teacher if you're still in school, or go check with a librarian or google if you're not.
