If I buy 3 80pin SCA drives do I then have to get 3 68 to 80 pin converters or just 1??

YOu need either 3 converts or one backplane...

If you're looking at several SCA drives, you might want to consider a backplane.

I should add that this is assumeing the backplane has at least three positions though I have never seen one with only two...

right, found a back plane on ebay and snagged it for $18 shipped.

Good for 3 drives.
