Quick RAM question

I'm putting together an i5-750 build with a Gigabyte P55M UD2 (maybe a UD4) and was wondering what speed I need.

The last time I built a system, RAM speed was tied to the CPU via FSB and you couldn't set it independently. Is RAM speed now independent of CPU speed?

With the CPU and mobo I have selected, would G.Skill Ripjaws 1600 C2 RAM work? Should I get the Ripjaws 2000 C2?

What would be best without going crazy on the price?

I am comfortable with OCing and intend to do just that, but as I said, the last time I did anything was with PC3200 RAM that was tied to the FSB for its speed, so I'm way behind on tech. Do you OC CPU and RAM independently now?

RAM frequency is determined using FSB: DRAM ratio.
