Is it unusual to ask that they don't contact your current employer unless a conditional offer is made? Is it generally assumed that they won't... or at least that they won't contact them till after an interview?

I'd be real careful, unless you can trust your current boss to give you a decent verbal review.
A few places I've worked, the boss has sabotaged the attempt , to make sure that I didn't get the new job. So unless they are hinting that you should find a new job, they may make sure that you don't get a good recommendation from them.
