Quick DDR2 question

Hey, all. Eventually here I'm going to be building a new PC, and most likely it will have DDR2 memory. The plan is to buy the best CPU I can and skimp on RAM. I will then upgrade the RAM as future budgeting permits.

I know DDR2 is meant to run in pairs, but is it possible to run just a single DIMM? Since I know I'll be upgrading later, it would be somewhat more convenient to start with one and add a second later.

If it is possible, is it possible on *all* motherboards, or just certain ones? Also, what performance sacrifice am I looking at in a single DIMM vs a pair?
