You can smell bad beef. It's natural for ground beef to turn from pink to brown as it ages a bit. The blood that keeps it pink leeches out of ground beef far more quickly than it does out of a solid cut like a steak or roast. As long as it's properly refrigerated, inside the sell-by date and smells like beef it's perfectly safe even if brown.
