I currently use Win2000 Pro

If I install Win XP on a new Hard drive, will I be able to use my Win2000 Hard drive as slave & copy files over from it to the XP drive ??

 
Yes. You could even install XP on the same drive and dual-boot, but you're probably better off starting with XP on a fresh drive and do as you suggested.
