i understand that a vlan capable switch, you are able to segment the ports into different network subnets.

my question is if i have a non capable vlan switch, does that mean the all the ports on that switch will be on the same subnet? and if you want another subnet, i would have to purchase another switch?

what would happen if i use private ip addresses for non vlan switches, setup some pcs something like 192.168.1.0 network 255.255.255.0 subnet, and some pcs 192.168.2.0 network with same subnet, assuming i have routers on both sides?

yes, only one ip network or broadcast domain per switch.

Technically you can have two subnets on the same broadcast domain. But I'll say it - don't ever do it. Its extremely bad practice and will cause a world of hurt later on.
