Question about fans and fan controllers

So I'm having some pretty big issues with heat in my 700d. I mean I open the side up and it's like an oven in there.

I've bought some fans for it - 3 120mm at the top and a thick 140mm for exhaust. They all have high CFM and since I have SLI I'll probably have to run them on at a higher RPM when gaming, but lower any other time.

Knowing this, I'm wondering how the fan speed is controlled? Let's say I use an adapter and plug the fan in directly to a power supply 4-pin.. at what speed will the fan run? Full power? Half power?

Ditto if I plug it into my motherboard.. will it run full power? Or would I be able to control it if my motherboard supports that (right now I only have one motherboard connector left so I'm going to have to use a direct to PUS connection anyway).

Would it be worthwhile buying a fan controller knowing that I will have to adjust things constantly when gaming?

The ones I bought are 4-pin, and the motherboard is a Gigabyte X58A UD5.

The issue is that it only has four 4-pins. Two of those pins are taken by the Corsair H50 cooler, and the other two are taken by the HD and intake fans at the bottom of the 700D case.

These new fans are going to have to be connected via the PSU. Hence my question about controlling their speeds.

Your best bet is to get a fan controller. Plugging them directly to the pay will result with them running at one speed all the time
