Calories aside Geekbabe, if I read your post correctly, the carrot or two sucks up the acid the same way a potato does to soup when too much salt has been added :confused: :eek:

BRAVO! Good job. Very true.. a dash or few of sugar makes it so it's not too sour, and if ya screw up and put too much salt in soup, throw in a potatoe... although it only works sometimes.... I've managed to accidentally pour half a container of salt in soup... and i threw in about 4 potatoes and it was still saltier than hell. :eek:

depends on what kind of sauce i'm making.

if it's a meat sauce, i want it to be meaty...and sweet and meaty doesnt sound right. so it's either meatless and sweet, or sweetless and meaty.

Well it depends what kind of sauce... if it's a cream sauce, then no. But if it's not, then i might to balance the acidic levels a bit. But for a basic spagetti/olive oil/garlic sauce, no.
