Okay, here's the question, when you make pasta sauce, do you add sugar to the sauce or not :confused:

Use an onion instead. When you begin cooking it, just drop a peeled onion in the pot and remove it after you've finished.

lager, maybe you've had too much to drink tonight, I didn't ask about store bought pasta sauce or homemade pasta sauce, I just asked if you add sugar to pasta sauce, the same way some people add salt to french fries. Are you as drunk as your NIC, maybe you are just that dense or maybe you have a comprehension handicap? :confused:

If you're making it from scratch (IT - basic pureed tomatoe), you need to add a little sugar. At my work (Papa Johns), our seasoning mixture is loaded with sugar, and that's mixed with a basic tomatoe sauce.

Why remove it? I chop and saute the onions first. I also add a little wine to the sauce instead of sugar. You'll also get more flavor by reducing the pH of the sauce with a little baking soda.

pasta sauce usually only needs sugar if it's really acidic,this is usually caused when it's premade and comes sold in a tin can.You can add a carrot or two to this kind of sauce,it'll pull the acid without messing up the base flavor or adding calories.

As others have already posted, add sugar to reduce the acidity level in canned tomatoes. Dont you watch Emeril ? He brings this up every time he works with canned tomatoes

Calories aside Geekbabe, if I read your post correctly, the carrot or two sucks up the acid the same way a potato does to soup when too much salt has been added :confused: :eek:

Sadly, when Emeril is on TV, I'm usually at work :(

The main reason I asked this question is because a co-worker made some pasta and sauce for us at work and it was great, I couldn't put a finger on why I liked the sauce so much until she told me that she added sugar to the sauce, something my parent never do :confused:

that depends on what you are putting in the sauce. take a taste before adding anything but the main ingredients.

If bitter add sugar.
