I have recently started working out again and I'm a little sore, which is to be expected. But I think my push up form may be off, because my lats are sore. From everything I remember, and everything I've read push ups shouldn't work my lats. If my arms aren't quite straight out could it cause my lats to be worked as well? Or is this normal and my body is just way out of shape?

It's most likely one of the muscles of the rotator cuff rather than the lats. The lats are a pulling muscle so it's pretty much impossible for you to actually use them in a push up position. One or two of the rotator cuff muscles might be confused with part of the lat due to its close proximity. They'll adapt pretty quickly though.

Your lats play a role in stabilizing the shoulder (when pressing) and your body (while in a push-up stance), so if you just started working out, some soreness there is normal.
