Yeah, it's Spring. When the sap starts flowing.

When the days are moderate and the nights are freezing..

Perfect maple syrup weather. :)

We used to have this huge maple tree in the back yard, and if you injured the tree - on nights when it was freezing, you would wake up to a sweet big icecicle. :) They were really good! Slightly sweet, mapley ice.. lol

Being from California, was used to synthetic maple syrups like Ms. Butterworths and Log Cabin, et cetera.

Then I lived in New England for a while and had aged Vermont Maple Syrup. The two year old stuff and older is out of this world. :D

Next trip to New England I'll bring some more home.
