Yeah, it's Spring. When the sap starts flowing.

When the days are moderate and the nights are freezing..

Perfect maple syrup weather. 🙂

We used to have this huge maple tree in the back yard, and if you injured the tree - on nights when it was freezing, you would wake up to a sweet big icecicle. 🙂 They were really good! Slightly sweet, mapley ice.. lol

Isnt that amazing? that is a lot of work, time and energy just to make one gallon of maple syrup.
 
Being from California, was used to synthetic maple syrups like Ms. Butterworths and Log Cabin, et cetera.

Then I lived in New England for a while and had aged Vermont Maple Syrup. The two year old stuff and older is out of this world. 😀

Next trip to New England I'll bring some more home.
