Pure maple syrup...

Get a pork tenderloin and slice it 1 inch thick. Pound each piece thin, then sautee them in a skillet with 2 tablespoonfuls of real butter. Remove when browned. Add a minced shallot and sautee for about 30 seconds. Add a 16 oz can of chicken stock and a tablespoonful dijon mustard. Reduce by 1/3. Add 3 tablespoons each maple syrup and balsamic vinegar. Reduce by half. Add pork to skillet and reduce till liquid thickens to a sauce.

Serve it up!

That sounds damn tasty. 🙂

The nice thing about aunt jamima is that it always tastes the same. Pure maple is sometimes good, sometimes bitter, never consistant. I hate it when it's bitter.

Real maple syrup comes from Canada; mostly Quebec and Ontario. Try #2 medium if you like it sweet and thick.
