My turkey is brining in a cooler right now in ice water.

Same. I use one of this big water coolers. Big boy barely fit. Brining really does do magic. It's amazing how much better it tastes.

Even if it's "self basting" brine that bird!

We kindof have to brine ours, since ours came home fresh from the farm on Monday.

when are you cooking tomorrow? I should probably hit the store and buy some veggie stock to start brining mine.

Uh... I don't know? My wife is cooking, ironically enough.

See? You should have read my post about that days/pound thing being only a rough estimate. Your particular fridge's temperature is pretty important in such an estimate.

New house. Don't know my appliances yet. The brine should take care of it. Go go gadget thermodynamics!

I like boomers idea of water bath initially to get the hard freeze off

Hold on a min., if your bird is "self basting" it already has been injected with a salt-based solution, brining might make it too salty, this happened to me once, if you've got a natural turkey by all means brine if not , beware..http://bbq.about.com/od/turkey/ss/aa110808a.htm
