one way is to use masking, although that looks like a PITA for this particular pic.

easy...
use the lasso tool, select the roses, goto select -> inverse. Then goto image -> adjust -> hue/saturation
Turn the saturation down to 0%
ok
ctrl-d to deselect
ET VOILA!
If you still have some color leaking out of the side, go ahead and use the sponge tool, make sure your sponge tool is set to desaturate, and then just "wipe up the color".

Looks easier than my method of "isolating" stuff.

I use magnetic lasso, transfer it to another layer, and grayscale the first layer.
 
that pic looks like the real deal black/white photo that was colored in by someone physically, not digitally. That technique has been around for years and years, and they teach you the basic technique in high school. I remember doing it, and you really do not have to be accurate to do it.

other than that, the only way to do it is what virtualgames0 says. I use the straight line lasso tool, and zoom in like 1000% and go pixel by pixel (if you want super accurate results).

was the only pic that is still active in that thread..but you get the idea on how it looked like..

anyways, do virtualgames0's method and zoom in until you can select pixel by pixel. it's the same method i've done to make that car red.
