FF (of course) and a bunch of plugins, NOD32, Diskeeper (or Perfectdisk). MPC, FFDSHOW, ATI TRAY TOOLS, rmclock, motherboard monitor, weather-watcher, utorrent, clevercache (or cachmeanxp), winamp

Windows XP Pro, Internet Explorer 7, Microsoft Office 2003 (outlook 2k3 and word 2k3 mainly), Windows Media Player 10, SpywareBlaster, Spybot S&D, AdAware, 7-zip, CDex/Lame, DVD Shrink, irfanview, crapcleaner, quicktime alternative, real alternative, macromedia flash, adobe acrobat reader, and any bioware game.

StreamTuner - tune into shoutcast streams
xmms - media player
Rhythmbox - basically a jukebox
VMware - Windows virtual machine
MS Office/Visual Basic for Applications - I wouldn't have a job without these. And without a job I wouldn't have food. And without food I wouldn't have a life. So I literally can't live without these.

Vim - VI editor for various OSes. Among the first things I install on my Windows boxes.
Eclipse - Eclipse is a nice, free development environment.

For me: Skype. Free calls all over the US, cheap international calls, and free video chatting with anyone who has Skype (and a webcam obviously). I use it everyday!
