I need to have CCAA and mcsheild running (school requires it) but I dont have an ipod and I dont use itunes.

So besides that I was wondering what processes I can close and how can I make sure that those processes don't start when I open up windows?

I use Sysinternal's Process Explorer (freeware) and it does a much better job of identifying what process does what, and showing the "tree" from any given process:

As for what Processes are "needed" by Windows, it depends on many factors, such as: Wireless?/Internet Connection Type/ what ever else is required by your individual situation, but here's a list of services that can be changed from default, possibly bringing down you number of "start w/ windows" threads:

And here is a read on just how few are actually needed to "run" maybe not practical, but it gives an idea of how much Bloat is actually there:

Although, MS says these can't be stopped (w/ task manager) but they can with Proc Expl.

I have mine down to 22 active, (25 w/ Proc Expl, FF and Speed Fan) but one I have to enable once a month, for Win Updates, than I turn it back off. Another, I have to enable, when I want to use my printer. I could get rid of one more svchost, but it controls my Desktop theme.
