1) Not going to overclock anything
2) Will upgrade processor and video at some point down the road
3) Not looking to go overboard on buying a PSU that I don't/won't need

Also, should I look at aftermarket HSF's? If so, recommendations?

You should be fine with a ~500w PSU. That should take care of you even if you add a couple more drives and a better vid card etc.
Just make sure its a good brand PSU. You get what you pay for with PSUs so get a Enermax, FSP, PCP&C, Seasonic PSU. Should run you somewhere around $100 or under. You could also look at Antec PSUs if you live near a Frys. They has the NeoHE for $40 after rebates.
 
a good 400w would be more then fine for that setup now, but depending on what cpu/gpu you are going for later a good 500watt would leave more room for upgrades.
 
Thanks for everyone's input. I think I'll go with something around 500W to give me some breathing room down the road.
