Twice baked potatoes with all kinds of stuff piled on FTW.
With loads of horseradish in the mix!

If we have left-over baked potatoes, my wife like to cut them up and make...hash browns/home fries/cottage fries (WTF ever) out of them. I don't like the texture...but, fuck it...I eat them anyway.

As far as making fries at home goes, the best way I have found is the actifry. Cut the potatoes with a cutter to get them into uniform fry size cuts and throw them in there with a bit of coconut oil for about 35 minutes. The coconut oil seems to be key, if you use olive oil you will get the taste of it in the fries, but coconut oil doesn't seem to leave any taste. Of course a deep fryer is always the best way but that's kinda impractical to have at home unless you use it a lot otherwise it's just a waste to use that much oil for a few meals.

I do a parboil + double fry.

  1. Boil the bitches, put on a paper towel-lined baking sheet then into the feezer
  2. Fry at 325
  3. Fry at 375
  4. Salt those MFers
