Potato based side dish recipes? (scalloped, mashed, etc)

i like cheesy P's... it's basically hash browns (the little square ones) with cheese, cream cheese, sour cream.... i don't have the recipe on me but it is excellent. i think they can be served hot or cold. dish delish
 
Boil small red potatoes until soft
Drain water
Add a spoonful of butter
Add a spoonful of herb and garlic cream cheese
Add salt & pepper
Smash up the potatos and stir it all together

Easy and delicious.
 
Potatoes au Gratin

Peel about 2 pounds of potatoes and slice thin.
Rinse and cover with water in a medium saucepan. Bring to a boil.
Drain and rinse with cold water to stop cooking.

In a saucepan, melt 2-3 tablespoons of butter over medium heat.
Add diced onion (1) and sauté until tender
Add minced garlic (2 cloves) and parsley (1 tablespoon).
Stir in flour (2 tablespoons) and pepper (to taste.. i usually use 1 teaspoon) until sauce is smooth.
Gradually add 1 1/2 cups milk, cooking and stirring over medium heat until thickened. Stir in 1 cup shredded cheese (any flavor.. but cheddar is best) until melted and sauce is smooth.

Arrange sliced potatoes in a casserole dish, adding salt and pepper to taste.

Pour sauce evenly over potatoes.
Cover and cook at 350° for 40 to 50 minutes, or until tender.

Ok these didn't turn out well for me at all.

The onions and mushrooms soaked up most of the grease - so when I added flour it just sorta stuck to everything than making a roux as I'm assuming it's supposed to do.

So I added a little bit of olive oil then a bit of flour and got my roux, then added 2% milk very slowly and tried to add cheese (colby jack). It just didn't really melt together very well. Also the potatoes were a bit slimy.


Could've been something I did wrong though
 
I don't have an exact recipe, and I don't know what they're called, but I do know that the following tastes good:

Make mashed potatoes.
Place mashed potatoes in baking dish, so that they fill no more than half of it.
Mix sour cream and shredded chedder in a separate mixing bowl at a 1:1 ratio.
Place half the sour-cream-cheese mixture in the baking dish and mix the potatoes with it, smothing afterwards.
Spread the other half of the sour-cream-cheese mixture on top of the potatoes and bake uncovered at 350 degrees for about 20 minutes.
 
my mom makes the best scalloped potatoes.

not sure the exact recipe but she uses tons of cheese and bakes it in the oven.
 
I love bfast taters

microwave taters till tender, then dice.
Dice up some onioins as well

heat in a skillet olive oil. add onioins and taters and stirfry over medium heat adding spices to taste (I like adding some minced garlic, a bit of garlic powerder and onion powder, salt/pepper) and cook till your likeness, ( I like em a little crispy).

usually then serve on a plate toped with eggs over easy
 
Try using a rice cooker for quartered potatoes in the water, and (if the rice cooker includes an upper tray) cook green beans, peas, broccoli or cauliflower on top. Can also cook both rice and potatoes (in the lower part with water) at the same time. Add a little coconut oil for improved taste.
