Went blueberry picking yesterday (yay New England!) and decided to make some blueberry waffles with blueberry syrup for breakfast. Man I love tastebuds :shocked:
Recipe: Heat up your waffle iron & toss everything into a blender: 1/2 cup whole wheat flour, 1/2 cup milk (I use rice milk), 1 egg, 1 teaspoon baking powder, 1.5 teaspoons honey (I use agave nectar), 1.5 teaspoons oil (I use olive oil). Blend for 10 or 20 seconds, pour onto the iron, add blueberries as desired, then cook for about 3.5 minutes.
