I'm making this for our office's next chili cook off.. I lost horribly last month. Got almost a year to prepare!

Looks awesome. The coffee and unsweetened chocolate have long been known to add incredible, subtle flavors to a chile. But what really sets that recipe apart from the typical homemade chile is the use of fresh chiles. If you're throwing ground beef into a pot with a handful of supermarket chile powder, then you may as well get your chile out of a can.

Some people add carrots instead of brown sugar - it's highly regional.

Veggies in my chili:
Jalapenos
Cherry Peppers
Onion
Garlic
Fire-roasted tomatoes

Everything dice pretty small so it breaks down. I do 4 spice additions to keep the flavor distributed pretty well and always have to use beer.

Won't go into it, but I'll add some of my favorite ingredients that turn it from a meal to an experience (I have 3 "best in class" awards from 1994, 95, and 96 :D)

- Braised top round
- scalded Anaheim peppers
- thicken with masa

I agree 100%. There's nothing worse than greasy chili. You really need very little fat in the meat you use.
Also agreed. It's almost like he says that a round steak doesn't have beef flavor. It does. It's just that round steak is generally tough (if cooked as a steak). But, the cooking process for chili allows it to get tender.


Anyway, when I've made chili and had people raving about how good it was, it was always made with extra lean venison. When I grind my venison up into hamburg, I spend a couple of hours cutting off every little bit of fat and silver skin that I possibly can. The fat content is practically zero. I do add a couple tablespoons of oil when I'm browning it. (And, I don't tell people that it's made with venison until after they've said how good it is a couple of times.)

chili swimming in grease is not good eats dude. lean meat is what is used in chili.

I'm ok with people thinking I am wrong. I was taught to use fatty scraps of meat, spices, and peppers and to let is simmer for a good long time. Granted I don't keep a stockpile of meat scraps handy so I use ground chuck or ground pork if it's cheaper.

I like a variety of chili, but my stomach can't handle super-hot ones anymore, so I either do mild spice or no spice. For the no-spice ones, there's a lot you can do with different seasonings to make the flavor amazing even without heat. Almost like a stew but not soupy...

Posted this a while back in another of the many chili threads.

"Someone has to make the following recipe so that I can have independent validation that it is, in fact, the best damn chili recipe on earth.

It was developed by a guy named Don Ingerski. Don was a police officer, and passed away last year (RIP). The website that used to host this recipe (which Don named, "Motor Squad Heat") has been taken down since his passing, but I am posting it here and elsewhere to preserve it for everyone to enjoy. I certainly have, and one day I plan on contacting Ms. Ingerski to let her know just how much I have enjoyed her husband's Chili.


Enjoy:

Ingredients
* 1 and 1/2 lbs of ground beef
* 2 medium green peppers
* 2 large onions (not Bermudas)
* 8-15 jalepeno peppers
* 1 large can of kidney beans
* 1 16oz can of "tomatoes for cooking"
* 1 small can of black beans
* Two 29oz. cans of tomato sauce
* 1/2 tsp of garlic (or to taste)
* 1 packet of "Sweet n Low"
* 1 capful of Liquid Smoke
* 1 tbls of Worcester sauce
* 1 tbls of A-1 Steak Sauce
* 4 tbls of BBQ sauce
* 1.5 oz. of chili powder
* 1 tsp of cumin
* 1 tsp of allspice or 1/2 tsp of cinnamon
* 1 tbl of Cayenne pepper (or to taste)
* 1 tbls of Lawry's Seasoned Salt (or its equivalent)
* 1 tbls of pepper
* 2 tbls of vinegar
* 1 cup of beer
* 1 tlbsp of Hershey's Cocoa

Brown the ground beef and break up to fine pieces while browning. DRAIN ALL GREASE. Mince up (easy with a food processor) the onions, green peppers, and jalapenos. Add the minced stuff to the hamburger. Drain the juices to the cans of kidney and pinto beans and "cooking tomatoes". Also, while the whole tomatoes are in the can, take a knife and mince them up also. Add all of these and remaining ingredients, stir well, and bring chili to a boil. Simmer at lowest heat while covered for at least two hours. Serve up with tortilla chips and shredded cheddar cheese for topping if desired."

Note - finely mincing the veggies is key for the recipe. If the veggies are coarsely chopped the texture will be way off.

I've never had tomato soup with sweet n' low, liquid smoke, A-1, or BBQ sauce in it. Am I missing something....?

you can't be a chili snob and totally disregard the definition of tomato soup. :thumbsdown:

if it has any other ingredient (outside of seasonings and toppings) other than tomatoes (ie: a pound of ground beef, peppers, onions, and beans), I fail to see how it could constitute tomato soup.

Sweet n Low? Seriously, instead of sugar?? You're going to add beer... and you're worried about a packet's worth of sugar? (Or is there another reason?)


"Drain all grease" - or, in other words, use leaner meat that has less grease. Eliminate it in the first place, or eliminate it later.

You're right ... I just realized it's TWO 29oz can's for only 1.5lbs of meat. That's fucking nuts. Besides, you should use tomato paste with beef broth (or some kind of broth) and beer as the liquid base.

regardless, it's at least tomato/beef/bean soup, not tomato soup :p

if I ordered a grilled cheese sandwich and tomato soup at a restaurant and it came back with a bowl of that recipe, I'd be pretty pressed.

3 parts bone in short rib (cross cut to about an inch and a half or two)
1 parts dried chiles of various types
some garlic
some mexican oregano
comino (fresh toasted and ground is best)
6 pack firemans 4
tallboy of lone star

crack open a firemans 4, pour into glass, and consume.

remove stems/seeds from chiles, reconstitute in warm water, run them through a food mill to get rid of remaining seeds/inedible skin bits.

that was hard work, so open another firemans 4.

brown meat in batches in a dutch oven. ddrain off most of the fat between batches. don't forget to salt and pepper. when you're done, brown the garlic (less than 1 minute, stuff burns easily) with the comino, then add the meat and chile paste back in. cook until done. if you need liquid, add lone star. walla, chili.

drink a couple more firemans 4 while watching football.

serve with fritos, chopped onion, shredded cheese, pickled/fresh jalapenos, and the remaining firemans 4. don't eat the bones.


5 cans of beans. all different types of beans.

some hamburger.

some tomato sauce

and some hot sauce.

hmm, chili!

if i added 5 different types of beans to cioppino would you think i had cioppino?

Chili dog I had for lunch, I DON'T WANT lean beef, Turkey, Chicken, beans or onions. Grease should be plentiful and the consistency should be thick enough where a fork can stand up in it imho.
