With theBiostar TForce 965PT, it says only use the DDR2 800 RAM. But, I have seen other people saying they were using DDR2 667 RAM with that mobo. So, if I were to put an e6400 or an e6600 processor in that mobo, would I HAVE to buy 800 RAM or could I get away with the 667 RAM. If so, what are the pros/cons besides price? Again, thank you in advance, I know I have been flooding the board with questions lately- I just like to make an informed decision.

You're fine with the 667. Difference is just that the 800 is rated to run faster (400FSB vs 333FSB).

How would that affect me if I were to decide to overclock my e6400/6600? Mind you, I don't intend to overclock much, but if I wanted to, would I be limited?

Well just take the multi of each processor...
For the e6400 you have x8 and for the e6600 it's x9.
So just multiply each by 333 and 400 for theoretical max overclock running the RAM and FSB at 1:1.
