I currently have dual nVidia 6800 GS's running in SLI mode on my system and I was wondering if there was a way to turn off the second one while not playing graphic intensive games. Without reaching into the case and taking it out of the slot of course :D

The reason I'm asking is because the fans are rather noisy, and since the dual SLI mode is only needed for a couple of my games it would be nice to cut back on the noise when doing simple things like surfing the internet.

answer: you can't

but there's an alternative way...use rivatuner to change the idle fan speed to as low as possible without frying the cards

Download a program that detects the difference between 2D and 3D applications.(Rivatuner may do this, but I am not sure. I use ATI Tray Tools, but it may not work on nVidia cards) Then have for the 2D mode, your gpus both run at the lowest possible clock speeds without causing a system crash. At this speed, you should be able to turn the fans down to a silent level, possibly even off. Then have it set to go back to normal clocks for a 3D application.
