You should read the real story:

Make Room! Make Room! by Harry Harrison

Lots more in the book than the movie. The book only hints that Soylent Green is people. The rest is pure crime solving detective work.

It ended with Heston being shot and hauled away in a stretcher while shouting "soylent green is people!". Then you see his bloody arm raised high as the scene shifts to the field of flowers that his father saw when he chose suicide.
