I sync every evening, including podcast and app updates.

every 3 or 4 days to sync my contact book and calender/appointments..some pictures.
 
Pretty much for updates only. Many people argue that the iPhone sucks because it needs to be synced with a computer but it really doesn't except to change your music out. But iOS5 with its OTA updates and hopefully wireless sync will change things to a point that some of us may never sync more than once and if we do it would be so much easier.

Do you mean iOS updates only, or App updates, too?

Do you keep your contacts in the Cloud?
Are your Apps backed up somewhere?

I sync whenever I want to put new audio files on my iPhone, so the length of time between syncs varies quite a bit. Contacts sync automatically via MobileMe, so I don't have to worry about that.

You don't need to backup apps. You can always redownload them from the app store. If you have bought them in the past, they won't charge you for them again.
 
Hardly ever. The only times I sync are when I have to charge my iPhone and I do it by plugging it in to my computer.
