Like CPA I also log everything I eat. I have 1700 calories/day more days than not. Then on my "cheat" days I'll eat 3500-4500 depending on mood. Out of all the weight maintenance tactics I've tried this is both the most successful and most painless of all of them. I figure my maintenance calories are in the vicinity of 2500 or so. I have a little more weight to lose and then I'll aim for around 2400-2500 most days and then keep the cheat days there and see how that works. If I start to balloon, as the math would indicate I would, I'll have to lower the other calorie days.
