I don't do it a lot. It just gives some extra flavor kick to those things that it is appropriate for... like french fries. 😉

My cousin cooks bacon in bacon grease. I find that excessive.
That is a bit much.. the bacon produces plenty of its own grease.. lol

Actually, this was standard practice in most homes all the way up to the 70s and for the last two centuries... and the obesity epidemic is less than 20 years old.

If anything, the END of the high fat diet spelled the begining of the obesity epidemic. The start of the epidemic directly correlates with the start of the low-fat craze.

Ah yes! I forgot, my mom also made french fries and onion rings in the bacon grease. YUM!!

Rancid? It's not rancid.

It shouldn't really ever go bad unless your storage conditions suck. The bacon grease we have has been in the fridge in a Kerr pint jar for the last several years, it still looks and smells fresh.

It would be a good idea to put it into your storage container while still hot, though.
