Mandarin Oriental Hong Kong.

Agreed. Not cheap, but quality place. Got stuck in HK during a typhoon, had a room booked at the Mandarin. Unfortunately, my travel agent screwed up and booked the Mandarin in Macao. So the city is closing and I don't actually have a room booked, with the lobby becoming increasingly crowded. Got a king room, and they upgraded me to the suite for free due to the mix up. Had a really nice stay there.
 
You didn't qualify your budget.

Are you a "pick me up at the airport with a Rolls Royce limo" or "I'll be fine somewhere near the Ladies' Market" kinda guy?

But, as I often tell people that visit Hong Kong - take the ferry over to Macau and have a ball. I heard Hotel Lisboa is a happening place to stay at and have fun... :sneaky:
