I was up until 2:30 this morning making pizza dough. I liked a lot of the properties of the last batch of dough. I made a few minor changes in an attempt to make improvements. We will see how it turns out when I make the pizza this week. I'm hopefully optimistic.

are you on a spiral mixer, or a planetary?

I've been doing pizza for over 25 years (4 years at the pizza shop!). It's like chasing the Chili Unicorn...the goal is never to catch it, but to have fun chasing it, haha!

I use a KitchenAid mixer. I really don't like it too much. It would probably be fine if I was only doing one. But doing a batch of four it has trouble handling it. If had the money I would get a better mixer.

You probably did not venture into the world of dough mixers, but they are like, $89 for this pretty solid mixer everyone uses, $650 for this slightly better one, $2700 for this really nice one, and hey, we got the REALLY GOOD ones 'round the back.

Yeah I would like to have a better mixer. But for now the money is not there. I'm not a business so there will be no multiple thousand dollar mixer. I seem to be doing ok.

My wife roasted me for pineapple pizza for our entire marriage (pineapple & Canadian bacon is my JAM!). She finally caved & tried it last year and now she is addicted lol. They keys are:

1. It has to be done right. Crappy canned pineapple on soggy pizza with limp ham slices is gross.

2. Crispy Canadian bacon with caramelized pineapple is elite!

3. Thin & crispy ham with crunchy charred bacon crumbles & fresh pineapple is a close second!
