This is awesome!

Martin Philip is a generous genius when it comes to teaching the art of baking pizza in a home oven — that much is well established. What you didn't know until now is that Martin has been spending his free summer time operating a volunteer pizza pop-up out of his home. His wildly successful 'Anonymous Pizza' project supports Slice Out Hunger, a non-profit that purchases pizza from independent pizza makers and distributes them to soup kitchens and shelters. Martin's loving family and community also swoop in to make the most of this culinary altruism.

i don't know what sort of mozzarella situation you guys have over there, but here in the UK you can buy own-brand mozzarella (tastes *identical* to Galbani) for 60p each. Which puts it as cheaper than any version of for-pizza mozzarella.

Obviously, you can't use it out of the pack like that; i mean, you CAN, but you need to know how. Anyway,

i buy that mozzarella and i simply cube it, salt it with rock salt, and leave it in a bowl for a few hours, or overnight. Drain the serum that comes out (salting is it NOT necessary, you can simply cube it and leave it, but a bit of salt does improve everything) and the next day, or even a few hours after, it's ready to use.
It will still melt properly, remaining white instead of going yellow.

Trying my hand at an Americano style margherita pizza tonight. Fresh basil, tomato, bell peppers, jalapenos, and pineapple.

YouTube keeps recommending New Haven apizza videos. Is it worth the 2.5 hour train journey from NYC to New Haven for this?

Depends:

1. Do you like NYC pizza?

2. Do you wish it was CWISPY?

It's a thinner, charred crust. Not everyone's taste, but it's MY favorite!

Notes:

1. Not a fan of the Sally's in New Haven. The new Wethersfield store is better, but not really worth a drive.

2. Pepe's Quattro Formaggio + a Foxon Park soda = great! But ONLY the New Haven location! Go there for a pre-game lunch "appetizer".

3. Then go across the street to Zeneli's. Get a Neapolitan pizza, some homemade pasta, and honey-walnut ricotta toast for lunch. Not Apizza but too good to pass up!

4. For dinner, go to Modern. Get an Italian bomb and a tomato & cheese. Optionally a white clam pie if you're into that (I'm not, but it's VERY popular!).

5. Go to the Arethusa Farm store for ice cream & some take-home cheese!

There are some nice walks & galleries if you want a more chill day! The leaves are changing & the weather is perfect, so now is the time to go! There are a LOT of really great places in the area, but that will give you a flava of CT pie's!

both good choices. the place looks nice from the photos.
@DigDog we made it to Gustapizza and the Ponte Vecchio just like I said we would.

The pizza was delicious and the bridge was beautiful. Also, thank you for the suggestion about cutting out Lucca and spending more time in Cinque Terra. It was a great suggestion.

If you could see me now, you would see the most smug smile in the history of smugness.

As a memento for others who will come in the future,

1. thank you
2. i know my stuff
3. i can only repeat that EVERYONE always tries to cram too much shit in their italian holiday. Always, without fail, erring with consistency, the eternal mistake, inescapable fate, the.fail.destiny, everyone always always makes this mistake.

See the thing is, the less you do .. the more you start to look around and get on-the-spot ideas, "darling let's go visit that castle", "i wonder what's the view is like from that tower", "what a beautiful store, let's go inside" and the inevitable "oh they sell Chianti by the litre here" which invariably tends to then take away even more time. So in reality the time you have to check your bulletpoints is far less than you initially think it is.

But .. isn't that what a vacation is for ? To NOT have to do shit?

oh an @Kaido you may notice how the mozzarella in the photos above isn't radioactive orange.

haha so New Haven apizza is a thinner crust. A single medium pizza split between two people is more like an appetizer. Zenili's stuff is puffy Neapolitan & is a solid meal with pasta & bread. Plus they have a dope-looking oven lol
