I have an entire color image to start with

I want to turn that image into a black and white image and leave some things colored... if you have ever seen the movie schindlers list, that's the effect I'm talking about, with the girl and the red jacket.

I just want one thing colored in the black and white image, however, I want it to have the original color, not a color I gave it.

so is there a way I can put like a hole in a layer?

Duplicate the layer. Make one of them grayscale, use a layer mask on the color one to only show the colored portion. Easy as pie.

layer mask will get you better results quicker, and easier to edit if you f-up (not that there's a whole lot to f-up, but still...)
