Photoshop gurus help! How to make color image into Black and White?

I want to make a color image into a plain black and white image (not dark but light).
How do I do this in Photoshop?

Change the color to greyscale. Not sure where it is hiding in Photoshop, but that should be real easy.

Or you can desaturate.

Image -> Mode -> GreyScale

Image -> Mode -> Grayscale

Change it back to whatever mode you want if you want to add color again.
