Pesto sauce

I want to make pasta (tortellini) with pesto sauce but the pesto is refrigerated. What is the best way to prepare the sauce? I don't want to put cold sauce on hot pasta. TIA.:cookie:
 
I'd just let it sit out at room temperature while you're waiting for the water to heat up and the pasta to cook. By the time the pasta is done, the pesto should be easy to mix into the pasta since it won't be a cold block and it won't be cold enough to make the pasta cold.
 
After you make the sauce, pour some of the boiled water on top of it. The starchy water adds flavor!! Dont overdo it tho
 
Just leave it out before you start boiling water and cooking the tortellinis. It works fine. (And is hella good 😉)

cold sauce on speghetti. mix. microwave for 30 sec ftw?
 
Put the sauce in a large pan or a wok, and warm it up using very low flame. At the same time cook the pasta. When the pasta is ready throw it in the pan and mix it with the sauce, now rising the flame. The correct way to do this would be Sautéing it (max flame, high temperature and make the pasta "jump"). But if you fear you could burn it just use medium temperature and keep mixing the pasta and the sauce all the time with a wooden spoon for a couple of minutes.

This thread made me remember I supposed to go out and by a bushel of basil today..........duh. Now, I'll have to wait next weekend for the farm market.

Basil is $7-8 a pound at the state farmers market. At a grocery store like Kroger about an ounce or two will run you around $3.

I put oven roasted almonds in my homemade pesto. I did at my restaurant and I do it at my home. You're free to add whatever to yours.

1) cook pasta
2) In small sauce pan warm pesto, season to your liking
3) Over medium low heat, stir/whisk in cream about 1/4 cup at a time to pesto stirring constantly.
4) let pesto cream sauce simmer once emulsified (NOT BOIL) to combine flavors

Serve over pasta. Prefer to add some sausage and mushrooms to this if you have it handy. Sundried tomatoes never hurt either.

Yes, it is subjective but the fact remains that I've never had a store bought pesto that compared at all to the pesto I can make at home with fresh ingredients...and I've tried many of them.

If you think store bought pesto is good then you are sadly lacking in taste.
 
A couple of years after my wife started working again, she said she couldn't keep up with the garden and I could plant whatever I wanted. The result? 300 square feet of basil and cantaloupe, oh, and one tomato plant for her. I was in pesto heaven.
